German Honey Biscuits

traditional German recipes


125gms butter
2 eggs - beaten
500gms honey
500 gms sugar
cup water
2 tspns of bicarb dissolved in cup vinegar
1 kg flour
1 tspn cinnamon
1 tspn ground mace
1 tspn allspice


Boil honey, sugar and water gently for hour. Remove from the heat and add butter, stir well and allow to cool. When cold, add well beaten eggs and stir in soda and vinegar mixture. Sift flour and spices into a large bowl and add the liquid. Stir well, cover and leave in the fridge overnight to thicken. Roll out to cm thickness and cut into decorative shapes Bake on lightly greased trays at 80*C for 12- 15 mins. Makes hard biscuits.
